Spinach and Chicken Quiche.

Ingredients

  • 1 cup of Spinach
  • 1 Chicken breast
  • 2 cups of Courgettes
  • 4 mushrooms
  • 2 garlic cloves
  • 5 eggs
  • 100ml of Milk
  • Salt and Pepper
  1. Chop the chicken into small pieces, fry the chicken in a pan with the garlic
  2. Grate the courgettes, chop the spinach and mushrooms.
  3. Combine all of the ingredients into a bowl, mixing them together.
  4. Crack the 5 eggs into the mixture, adding the milk and salt n pepper.
  5. Pour all the mixture into a oven proof dish.
  6. Bake in the oven on 175 degrees until golden and the egg is cooked.
  7. Enjoy :)

A fantastic healthy low carb dinner option. Beef mince, tomatoes, beans and broccoli.
This isn’t the lowest carb dinner, but it’s working for me :)

My partners breakfast, minus the hot cross bun and 4 egg yellows, that’s what he has everyday to kick start his day :)

Afternoon snack, may not look all that healthy, but for my diet this is a great snack. Two fish burger patties, lettuce, low fat tartea sauce and Edam cheese.
I’m doing a low carb, high fat diet at the moment. I’m not as strict as most people are and its working amazingly :)
I started last week thursday starting weight at 61.1kg, today I weighed in at 58.8kg. I’m going hard at the gym and loving it :D 
So motivated lately :D
